April 3, 2015 — Unpredictable weather in recent years hasn’t been kind to the fish industry. Last year, continuous freezing on the Great Lakes caused by the polar vortex led to major supply shortages of gefilte fish—a staple for the Passover holiday. This year, though the Northeast endured another tough winter, supplies for the stuffed fish dish are much more available.
According to The New York Times, NYC-area establishments such as Zabar’s, Ben-Z’s, Gefilteria and Sansky’s learned from last year’s issues and have subsequently been better prepared this time around. Gefilte consists of whitefish, carp and pike, and because whitefish was so scarce last year, some of these establishments took precautionary methods such as freezing what they had before winter while others looked to other supply sources in case of a repeat of last year.
